Cream of Tomato Soup Recipe
Heat the olive oil in a large, deep stockpot over medium heat.
Add the onion and carrots and fry for 8-10 minutes, until tender.
Add the garlic and cook for 1 minute.
Add the tomatoes, tomato paste, basil, chicken stock, salt, and pepper and stir well.
Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 minutes, until the tomatoes are very tender.
Either using immersion blender, blend until pureed.
Return to the pot, if applicable, and then add the almond milk and stir to combine.
Season to taste with any additional salt and/or pepper.
Cauliflower Cheese Sauce
Heat the olive oil over medium-high heat in a skillet and cook the garlic until tender and fragrant, about 2 minutes. Careful not to burn. Remove from heat and set aside.
Add the cauliflower florets into a deep stockpot and then add the vegetable broth. Cover and cook over high heat for 8-10 minutes, or until the cauliflower is tender when it pierced with a fork. Do not drain.
Place the cauliflower florets to the bowl. Add 3/4 cup of the hot vegetable broth you used to cook the cauliflower, followed by the sautéed garlic and oil, sea salt, pepper, and almond milk.
Use the blender to blend ingredients for 1-2 minutes until the sauce is very smooth. If the sauce is too thick, you can add equal parts almond milk and vegetable broth. You may have to do this in batches, depending on the size of your container.
Summery Zucchini-Basil Soup Recipe
Heat olive oil in a large saucepan or saucier over medium heat until shimmering. Add leek and celery. Season with salt and cook, stirring, until vegetables are softened but not browned, about 5 minutes. If the pan starts to look dry at any point, add a small splash of olive oil. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add zucchini and cook, stirring, for 1 minute. Add half of the basil, stir to combine, and add water.
Bring to a simmer and cook, stirring with immersion blender occasionally, until zucchini is tender but still bright green, about 10 minutes. Add remaining half of basil and blend soup using a handheld immersion blender or a countertop blender until it is as rough or as smooth as you like it. Season to taste with salt, black pepper

Core apples without peeling, then slice and roughly chop into 1/2- to 1/4-inch pieces. This will yield approximately 3 1/2 pounds prepared fruit (16 cups; 1.5kg). Transfer to a 5-quart Dutch oven, along with sugar, salt, apple cider vinegar, orange peel, and cinnamon stick. Stir to combine, then cover and place over medium heat until apples have wilted and begun to bubble in their own juices, about 15 minutes.
